Thai Hom Mali Rice or Jasmine Rice

Thai Hom Mali Rice and Jasmine Rice refers to the same thing. The name is inter0changeable.

The rice must be harvested earlier than other type of rice. If not, the grains will be too ripe and lose their unique fragrance, tenderness, and taste.

New crop are marketed rice marketed soon after harvest and needs less water to cook. The harvest period is around 20 Nov.

Old crop is stored 5 to 6 months after harvesting. It requires more water to cook but does not become tough, the way other species do.

Real Thai Hom Mali Rice will get a seal of Approval.

Yam Cake

To cook yam cake, yoiu must use Thailand yam. It is softer throughout. Malaysia yam is not recommended because the head and base of the yam would be harder. And it is not good for yam cake.

Fried Egg Soup

To cook nice fried egg soup, you must fried the egg first. Once it is cooked, put a lot water to cover the egg. This is called overboil. As there are a lot of water, the oil will surface on the top of the water and you can scope up the cooking oil and the soup will not be that oily.

Dried Chicken Wings

When you deep fried chicken wings, you must make sure that the cooking oil is very hot. When you put in the chicken, they will produce a sizzling sound. That is when the water from the chicken wings will flow out from the chicken wings. Once the sizzling sound stops, you have to take out the chicken wings. If not, the cooking oil will start to seep into the chicken wings and make it oily.
